Why Does Honey Crystallise? The Truth About Pure Raw Honey

You open your honey jar and find it has turned thick, grainy, or completely solid. Your first instinct might be that it has gone bad.

It hasn't. In fact, crystallisation is one of the clearest signs that your honey is genuine and unprocessed.

Why Honey Crystallises

Honey is a supersaturated solution — it contains more dissolved sugars than water can normally hold in a stable state. Over time, those sugars naturally want to return to a solid form. This process is called crystallisation, and it is entirely natural.

The two main sugars in honey are glucose and fructose. Glucose has lower solubility than fructose, which means it separates from the water content and forms crystals first. The fructose remains liquid around it, giving crystallised honey its characteristic thick, spreadable texture.

Several factors affect how quickly honey crystallises:

  • Glucose-to-fructose ratio — honeys with higher glucose content crystallise faster. Rapeseed honey can crystallise within weeks; acacia honey, which is high in fructose, may stay liquid for over a year.
  • Temperature — honey crystallises fastest between 10–15°C. Warmer temperatures slow the process; very cold temperatures (below 5°C) also slow it by making the solution too viscous for crystals to form easily.
  • Pollen and particle content — raw, unfiltered honey contains fine pollen particles and natural compounds that act as nucleation points, giving crystals something to form around. This is why raw honey crystallises faster than heavily filtered commercial honey.
  • Water content — lower water content accelerates crystallisation.

What Crystallisation Tells You About Your Honey

Commercial honey is typically heated to 60–70°C and passed through ultra-fine filters to remove pollen, yeast, and particles. This process — called pasteurisation and ultra-filtration — destroys the natural enzymes, antioxidants, and pollen that give raw honey its nutritional value. It also delays crystallisation significantly, keeping the honey liquid and visually appealing on supermarket shelves for longer.

The trade-off is that pasteurised, ultra-filtered honey is nutritionally a shadow of raw honey. It looks better. It lasts longer on a shelf. But the compounds that make honey genuinely beneficial — enzymes like diastase and invertase, antioxidants, bee pollen, propolis traces — are largely gone.

Raw honey crystallises because those compounds are still present. The pollen particles, the natural enzymes, the unfiltered complexity — these are exactly what cause crystallisation, and exactly what make raw honey worth choosing.

If your honey never crystallises no matter how long you keep it or how cool your kitchen gets, that is worth questioning.

How to Liquify Crystallised Honey

Crystallised honey is perfectly usable as-is — it spreads beautifully on toast and dissolves easily in warm drinks. But if you prefer it liquid, here is how to do it without damaging the honey:

  1. Place the jar in a bowl of warm water — around 40°C, not boiling
  2. Leave it for 15–30 minutes, stirring occasionally
  3. The crystals will dissolve gradually as the temperature rises

Never microwave honey. Microwaving creates uneven hot spots that can exceed 70°C locally, destroying the enzymes and antioxidants that make raw honey valuable. The goal is gentle, even warming — not heat.

Does Crystallised Honey Expire?

Honey does not expire. Archaeologists have found 3,000-year-old honey in Egyptian tombs that was still edible. The low water content and natural antimicrobial compounds — including hydrogen peroxide produced by the enzyme glucose oxidase — make honey inherently self-preserving.

Crystallised honey stored in a sealed container away from moisture will keep indefinitely. The only risk is if water gets into the jar, which can lower the sugar concentration enough to allow fermentation. Always use a dry spoon.

  • Keep in a sealed glass jar at room temperature
  • Store away from direct sunlight and heat sources
  • Never refrigerate — cold accelerates crystallisation and makes the honey very difficult to use
