Stone-Ground Flour vs Regular Flour: What's the Real Difference?

Flour is flour, right?

Not quite. The difference between stone-ground flour and regular refined flour is not a matter of marketing — it's a matter of what survives the milling process and what gets removed.

How Regular Flour Is Made

Modern roller milling was developed in the late 19th century to produce flour at industrial scale. The process is efficient and produces a fine, consistent, long-lasting product — but it achieves this by separating the wheat kernel into its three components and discarding two of them.

A wheat kernel has three parts:

  • Bran — the outer layer, rich in fibre, B vitamins, and minerals
  • Germ — the nutrient-dense core, rich in vitamin E, healthy fats, and antioxidants
  • Endosperm — the starchy inner portion, mostly carbohydrate with little nutritional complexity

Refined white flour uses only the endosperm. The bran and germ — which together contain the majority of the wheat's nutritional value — are removed and sold separately or discarded.

The result is a flour that is fine, white, shelf-stable, and nutritionally hollow compared to the whole grain it came from. Many countries require refined flour to be "enriched" with synthetic vitamins to partially compensate for what was removed — which tells you something about how much was lost in the first place.

How Stone-Ground Flour Is Made

Stone grinding is the oldest milling method — and in nutritional terms, still the best.

The whole grain kernel is passed between two large stone wheels that crush it slowly and at low temperature. Because the process is gentle and the entire kernel is ground together, the bran, germ, and endosperm remain integrated in the final flour.

Nothing is removed. Nothing needs to be added back.

The result is a flour with:

  • More fibre — supports digestion, satiety, and stable blood sugar
  • More B vitamins — thiamine, niacin, folate, naturally present rather than synthetically added
  • More vitamin E — from the germ, an antioxidant that refined flour lacks entirely
  • More minerals — iron, magnesium, zinc, phosphorus
  • More complex flavour — the nuttiness and depth that makes home-cooked rotis taste genuinely satisfying

What This Means in Your Kitchen

Stone-ground flour behaves slightly differently from refined flour — and that's a feature, not a problem.

  • Rotis and chapatis made with stone-ground flour have more flavour, a slightly denser texture, and keep you fuller for longer due to the higher fibre content
  • The dough may need slightly more water and a little more resting time — the bran absorbs moisture differently than pure endosperm
  • Shelf life is shorter than refined flour because the germ contains natural oils that can go rancid — store in an airtight container in a cool, dry place and use within 2–3 months

A Simple Test

Take a pinch of your current flour and rub it between your fingers. Refined flour feels silky and almost powdery. Stone-ground flour has a slightly coarser, more textured feel — you can sometimes see tiny flecks of bran. That texture is nutrition you can feel.

The Bottom Line

Regular flour is optimised for shelf life and industrial consistency. Stone-ground flour is optimised for nutrition and flavour — the way flour was made for thousands of years before industrial milling changed the equation.
